Signature cocktails
Each season brings a selection of signature cocktails that define the character of Carbònic's Lounge. These are not experiments: they are creations rooted in classic techniques and reference spirits, with a twist of their own. A Porn Star Martini with a sharp acid note, a Negroni with smoky undertones in keeping with the grill philosophy, a seasonal proposition with fresh market fruit. Part of the menu rotates with the seasons to keep fresh produce central.
The Spritz and aperitivo
The Spritz has its own dedicated section on the menu. Aperol, Campari, Lillet, Select: classic and house versions for those who want to start the afternoon on something light and festive. Ideal as a pre-dinner aperitif or for a leisurely afternoon in Salou. If you are coming in a group, Spritz options work especially well for that first gathering moment: easy to order, easy to share, and perfect for building an appetite without overdoing it.
Mocktails: cocktails without alcohol
The mocktail menu is given the same attention as everything else. These are not juices with soda: they are compositions with the same structure as a cocktail — acidity, sweetness, bitterness, body — but without alcohol. Perfect for those driving, those who prefer not to drink, or those who simply want to stretch the evening without going further. Ask for a recommendation: the team can suggest the right mocktail based on the moment and what you feel like trying.
The Lounge: before, after or on its own
Carbònic's Lounge is not just a way to close out dinner. It is a destination in its own right. You can come for a pre-dinner aperitif before moving to the table, stay on after dinner to extend the conversation, or come straight to the bar without eating at all. The space is designed for exactly that: comfortable seating, music at a level that lets you talk, and service that does not rush you. In Salou, especially in summer, it is good to have somewhere the night can begin or end without anyone watching the clock.
