Cocktails at Carbònic are not an afterthought: they are a structural part of the experience. The Lounge has its own identity and opening hours that make it a destination in its own right, not just the epilogue to a dinner.

Our cocktail philosophy shares DNA with the kitchen: quality product, precise technique and the judgement not to add what doesn't contribute. The classics are classics for a reason: the Negroni, the Old Fashioned, the Martini. We interpret them honestly, respecting their proportions and choosing the bases with the same rigour we apply to selecting meat or wine. We do not deconstruct them unnecessarily.

Gin and tonic deserves its own chapter in Mediterranean culture. The evolution of available gins, premium tonics and botanical knowledge have turned this format into one of the most fascinating in contemporary cocktail culture. The balance between gin, tonic and garnish botanicals is as technical as it is intuitive.
