The carbonation that names the restaurant
The name Carbònic has a dual origin: the charcoal of the grill and the carbon dioxide generated during wine fermentation. That second protagonist has its own space here: a wine list built with the same criteria we use to select our ingredients. Known origin, producers with character and quality that shows in the glass.
The appellations nearby
The wine list pays particular attention to the appellations surrounding the restaurant. Priorat and Montsant are strongly represented, alongside the rest of Catalan appellations: Penedès, Terra Alta, Conca de Barberà, Empordà. Then the full range of Spanish appellations. Since 2025 we have added a selection of wines from the rest of Europe: Burgundy, Champagne, Loire, Rhône, Piedmont, Tuscany.
Organic, biodynamic and natural wines
Wines made with organic, biodynamic and natural criteria are increasingly present on our list. It's not a trend — it's a conviction: wines that respect the terroir and minimise intervention in the cellar tend to have more personality and a truer expression of where they come from. You'll find them across all appellations, clearly identified for those who seek them out.
Wines by the glass and Coravin selection
From day one we have maintained an extensive by-the-glass selection from multiple appellations. And to go further, we have a selection served using Coravin: a system that extracts wine from a bottle without opening it, preserving the wine for months. This allows us to offer by the glass references that would normally only be available by the full bottle.
White wines: a chapter of their own
The white wine list has grown significantly over the past two years. Our conviction is that white wine is the natural companion for grilled fish and seasonal vegetables. We work with Verdejos from Rueda, Albariños from the Atlantic coast, Godello from Bierzo and a selection of Penedès whites that have elevated the appellation to another level. For tables wanting to explore further, there are Burgundy Chardonnays and Loire Chenin Blancs worth ordering by the full bottle.
Pairing guidance from our team
With over 400 references, navigating the list can be complex. The Carbònic team is trained to help: they know the menu, they know the wines and they can suggest the pairing that best fits the dishes chosen, the occasion and the budget. No rigid protocol — just knowledge and a genuine desire to get it right.
Large formats and special references
For celebrations and larger tables, we have a selection in magnum (1.5 litres) from Priorat, Rioja and Penedès. Large formats age differently: the ratio of wine to oxygen means the evolution is slower and wines arrive at the table in a state of expression that is hard to replicate in a standard bottle. Ask the team about availability for each reference, as stock is naturally limited.
