The space
Carbònic occupies an open-plan space on Carrer Major in Salou, designed by architecture studio Isern & Associats. The design combines exposed stone, dark wood and steel with the central presence of the open grill, visible from most tables. Warm lighting and handcrafted finishes create an atmosphere that works equally well for an intimate dinner or a full-house celebration.

The heart of the menu is the oak-charcoal grill. We work with dry-aged cuts with a minimum of 30 days of ageing, with pieces that typically reach 60 and 90 days. The aged ribeye to share and the Wagyu cuts from Uruguay — BMS Score 12 — are the stars of the menu. Every cut leaves the grill at the exact right moment, with nothing between the fire and the plate.

The Sala Priorat is the private dining room at Carbònic, with capacity for groups of up to 20 people. It has its own entrance, independent climate control and dedicated service throughout the event. It is the regular choice for corporate dinners, family celebrations and business lunches. The name honours the neighbouring wine appellation, whose Grenache and Carignan we pair with many of the dishes on the menu.

The cellar at Carbònic holds over 400 references, with particular focus on Catalan appellations — DO Priorat, DO Empordà, DO Montsant — and reference producers from Spain and beyond, including Artadi, López de Heredia and Alión. The selection is managed by the front-of-house team with pairing in mind: every section of the menu has its suggested wines, available by the glass or bottle.

The Lounge at Carbònic has a life of its own beyond the restaurant service. It opens at 12:30 and closes well past midnight, with a signature cocktail menu that includes house-made gin and tonics, classic combinations and seasonal specials. It is also the meeting point before and after dinner — a bar designed to take as much time as you need.
